Ingredients
• 1 tbsp olive oil • ½ yellow onion, chopped • 2 cloves garlic, minced • ¾ cup chopped bell peppers (red, yellow, or orange) • 4 cups low sodium vegetable broth • 1 tbsp tomato or pepper paste • 1 cup chopped Russet potatoes • 1 cup chopped sweet potatoes • 1 cup Anthony’s Goods Split Red Lentils • 1 ½ tsp garlic powder • 2 tsp smoked paprika • 1 tsp paprika • 4 handfuls chopped kale • Salt, to taste • Anthony’s Goods Nutritional Yeast, for topping
Instructions
Nourishing fall vegetables shine in this smoky, cozy soup that’s sure to brighten up any cold and gloomy day. 1. In a large pot, sauté the onions and garlic until the onions are soft and translucent. Add the bell peppers and sauté for a few minutes longer. 2. Add the vegetable broth, potatoes, sweet potatoes, split red lentils, tomato (or pepper) paste and the spices. Stir to combine and let simmer until the vegetables are tender. 3. Stir in the kale and let it cook down. 4. Remove from the heat. Sprinkle with nutritional yeast for an extra kick of flavor.
