Ingredients
• ¾ cup Anthony’s Goods Rolled Oats • ½ cup organic unsweetened applesauce • ¼ cup peanut butter • 1 tsp vanilla extract • ¼ cup Anthony’s Goods Walnut Pieces, chopped small • ¼ cup mini chocolate chips • Pinch of salt
Instructions
These small batch heart-healthy cookies are made with rolled oats and sweetened with applesauce. Walnut pieces and chocolate chips add a welcome crunch to a soft and chewy cookie. 1. In a medium bowl, whisk the applesauce, peanut butter, vanilla extract and salt together until smooth. Mix in the rolled oats and fold in the walnuts and mini chocolate chips. Set aside and let the dough rest for 10 minutes. 2. Meanwhile, preheat the oven to 350F and line a baking sheet with parchment paper. 3. Use a cookie scoop to scoop the dough onto the parchment paper and bake for 10-13 minutes, until the cookies are solid to the touch and the bottoms are golden brown. 4. Let cool slightly before enjoying.
