Ingredients
• 6 medium cucumbers • 2 carrots • ¾ cup shelled edamame • 1 tbsp sesame oil • ½ tbsp sugar • 1 tsp salt, or more to taste • 4 tbsp rice vinegar • 1 tbsp Anthony’s Goods Unhulled White Sesame Seeds • 1 tbsp Anthony’s Goods Black Sesame Seeds
Instructions
This Asian-inspired salad is a perfectly crunchy and refreshing side dish for a variety of meals. It’s light, crispy, slightly sweet and filled with healthy veggies. 1. Using a vegetable peeler, slice the cucumbers into thin ribbons. Next, using a julienne peeler, shred the carrots into thin slices. 2. In a large bowl, mix the cucumber, carrots and edamame. 3. In a small bowl, mix the sesame oil, sugar, salt and rice vinegar. Mix until the sugar is dissolved. 4. Mix the salad with the dressing and sprinkle with white and black sesame seeds to garnish.
