Ingredients
• 3 cups sweet potato, grated • 4 eggs, whisked • ¼ cup chopped parsley, chopped • 2 ½ tbsp Anthony’s Goods Coconut Flour • 1 tbsp Anthony’s Goods Non-Fortified Nutritional Yeast • 1 tsp salt • 1 tsp garlic powder • ½ tsp smoked paprika • ½ tsp ground black pepper • A few shakes of cayenne pepper (optional)
Instructions
These high-protein savory waffles are made of eggs and sweet potatoes, and flavored with a delicious blend of herbs and spices. Whip up a batch for brunch, lunch or dinner for a healthy and satisfying meal. 1. Grate the sweet potatoes and measure out 3 cups. Using a cheesecloth, squeeze out as much of the liquid as possible and set aside. 2. In a medium bowl, add the eggs and whisk. Then add the grated sweet potatoes, parsley, coconut flour, garlic powder, nutritional yeast, salt, pepper, smoked paprika and cayenne pepper. Mix well to combine. 3. Using a ¼ cup measure, scoop out the batter and place it in the center of a well-greased waffle iron. Cook until both sides are well-browned. 4. Repeat until the batter is finished.
