As we've stated in the Lemon Chia Scones recipe post, there's definitely something fancy and refined about a sweet and delicious scone with cup of coffee. But what if you just want banana bread with your hot cuppa?

Then you need to try this recipe! These gluten-free and vegan scones are tender, fluffy, ad very banana bread-y. But they look fancy enough for high tea!

  1. Preheat the oven to 350° F and grease a baking sheet. 
  2. In a mixing bowl, mash together the bananas and coconut oil. 
  3. Add the coconut milk and chia seeds; mix well and let sit a couple minutes. 
  4. Add the flours, cinnamon, baking soda, and salt; mix well. 
  5. Form into a 1" thick round in the middle of the prepared baking sheet. 
  6. Bake for about 25 minutes.
  7. Let cool; cut into 6 scones. 
Prep time: 10 minutes
Cook time: 25 minutes
Yield: 6 scones
