Green muffins? With chocolate chips? Yes and yes! These fluffy muffins are sweet and delicious.  They're studded with dark chocolate and bits of nutritious coconut flakes.  But it's definitely the matcha, a nutritious green tea from Japan, that steals the show!

The matcha adds a beautiful color and mild green tea flavor to these muffins.  It actually plays really nicely with the chocolate and hint of vanilla in the muffin batter.

So maybe you'll get some weird looks from guests when you first serve these, but as soon as they try them they'll just be asking you for more! So delicious!

  1. Preheat oven to 375° F. Grease a muffin pan with a little coconut oil. 
  2. Whisk the eggs with the coconut oil and maple syrup. 
  3. Add the matcha, coconut flour, and coconut. Mix well. 
  4. Mix in the dark chocolate, baking soda, and stevia. 
  5. Scoop into 6 muffin cups. 
  6. Bake for about 25 minutes.

Prep time: 10 minutes
Cook time: 25 minutes
Yield: 6 muffins
