Gluten Free Whole Grain Pancakes
Pancakes; the ultimate breakfast food.  A staple during the week and lazy Sunday brunches alike, these yummy hotcakes never go out of style!
Pancakes also make a really nice snack or breakfast for dinner while watching Netflix; but you didn't hear that from us!

Anyway, any gluten-free person should have at least one standby pancake recipe.  This one is easy to put together and uses nutritious brown rice and teff flour.  But the best part? They're so fluffy and perfect that you'll never be able to tell they're gluten-free!
Top these with berries and maple syrup, or try butter and brown sugar, or break out the vanilla ice cream for a yummy dessert!!

Gluten Free Whole Grain Pancakes

  • 2 large eggs
  • 3 tablespoons oil (melted Anthony's Organic Extra Virgin Coconut Oil, grapeseed oil, etc.)
  • 1/3 cup cashew milk (can use almond milk or coconut milk instead)
  • 5 drops vanilla liquid stevia (or 1 tablespoon maple syrup)
  • 1/2 cup Anthony's Brown Rice Flour
  • 1/3 cup Anthony's Teff Flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon apple cider vinegar

  1. In a mixing bowl, whisk the eggs. 
  2. Mix in the oil, cashew milk, and stevia or maple syrup. 
  3. Add the rice flour, teff flour, baking soda, and apple cider vinegar and mix well. 
  4. Cook on a hot greased skillet by 1/4 cupfuls until golden on each side. 
  5. Enjoy with berries and maple syrup!
