Matcha Coconut Cookies with Dark Chocolate
Want a delicious dessert full of superfoods? These matcha green tea cookies fit the bill! Don't let the green color from the matcha deter you; these taste so amazing that even kids will love them! They contain coconut, almonds, matcha, and dark chocolate; they're full of nutrition!

If you want even more chocolate goodness (who wouldn't?!), you can dip half of each cookie in dark chocolate instead of drizzling.  Delicious!

  1. Preheat oven to 350° F. 
  2. Grease a large baking sheet with a little butter or coconut oil. 
  3. In mixing bowl, combine the coconut, almond flour, sugar, and butter. Cream and mix well. 
  4. Add the vanilla, matcha, and egg whites. Mix well. 
  5. Drop by tablespoonfuls onto the prepared baking sheet and flatten out into cookie shapes. 
  6. Bake for 15 minutes. 
  7. Let cool. 
  8. Melt the dark chocolate and drizzle over cookies. 
  9. Allow to set and enjoy.

Prep time: 10 minutes
Cook time: 15 minutes
Yield: 1-1/2 dozen
