There's something about adding red food coloring to a from-scratch chocolate cake that brings it to another level.  The rich color even seems to make the cake taste better! Red velvet cake makes a great birthday treat or fancy dinner party treat alike.

You'd never know that this rich and moist chocolate cake is gluten-free! It tastes much better than boxed cake, and the homemade cream cheese frosting is the perfect touch.  The coconut flakes on top make it even fancier.

Cake:
  1. Preheat oven to 350° F. 
  2. Grease an 8"x8" glass baking dish. 
  3. Whisk the eggs with the butter, chocolate, sugar, and cocoa. 
  4. Add the brown rice flour, arrowroot, and coconut flour and mix well. 
  5. Mix in the red food coloring, salt, and baking soda. 
  6. Transfer to baking dish. 
  7. Bake for 30-35 minutes. 
  8. Cool. 

Frosting:
  1. Beat together all frosting ingredients except coconut and frost cake. 
  2. Sprinkle with coconut flakes.
