Cinnamon Coffee Cake
Cake for breakfast? Who would argue with that? Don't worry; this cake is really healthy and high in protein.  There's no sugar added and it's made with high fiber coconut and almond flours!

It doesn't taste healthy though; it's fluffy and sweet with an indulgent cinnamon streusel on top.  It's the perfect dessert with scoop of ice cream, or the perfect breakfast with your morning coffee.  (Or with your afternoon coffee; we won't tell.) Make this gluten-free cake for your next brunch party, or make it on Sunday to enjoy throughout the week!

Cake:
  1. Preheat oven to 350° F. 
  2. Grease a 9" cake pan. 
  3. Whisk the eggs in a large bowl with the butter and erythritol. 
  4. Add the coconut flour, almond flour, cinnamon, and baking soda. Mix well. 
  5. Transfer to prepared cake pan. 

Streusel:
  1. In a small bowl, mix together all streusel ingredients and crumble over cake. 
  2. Bake cake for 25-30 minutes.

Cook time: 30 minutes
Yield: 8 servings
