Quinoa Chocolate Chip Cookies
There's nothing like a soft, gooey cookie fresh from the oven.  It's the perfect snack or dessert with a tall glass of cold milk!

These cookies are a healthier take on traditional chocolate chip cookies.  They have nutritious quinoa in them; but you can't tell when you eat them! Anthony's almond flour gives them a butter texture.  Bet you can't eat just one!

Quinoa Almond Chocolate Chip Cookies

1/2 banana, mashed
1/4 cup oil
1/3 cup maple syrup
1 cup cooked Anthony's Quinoa*
1 cup Anthony's Blanched Almond Flour
3 tablespoons Anthony's Brown Rice Flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chocolate chips

Preheat oven to 350° F.
Grease a large cookie sheet.
In a mixing bowl, combine the banana, oil, and maple syrup and mix well.
Add the quinoa, almond flour, brown rice flour, baking soda, and salt. Mix well.
Stir in the chocolate chips.
Drop by heaping tablespoons onto the baking sheet and flatten a bit.
Bake for 15-20 minutes.

Prep time: 10 minutes
Cook time: 15 minutes
Yield: 1 dozen

*To cook quinoa, place 1 cup of rinsed quinoa and 2 cups of water in a saucepan. Bring to a boil. Cover, reduce heat, and cook for 15-20 minutes. Remove from heat and let stand 5 minutes. Fluff with fork. 1 cup of uncooked quinoa yields 2-3 cups cooked quinoa.
