Amond Herb Focaccia

What is focaccia? It's a delicious Italian bread with studded with flavorful herbs.  It can be a flatter, more chewy bread, or a softer, fluffier one.  It's a wonderful accompaniment to soup or salad, and it even makes a great sandwich!

This gluten-free take on focaccia uses almond flour to get a buttery texture, and tapioca flour keeps the bread light, and, well, bready! The best part about this recipe is that there's no yeast or rising involved; just mix everything up and bake!

Almond Herb Focaccia

  • 3 eggs
  • 1/3 cup extra-virgin olive oil
  • 1/2 cup milk
  • 2 cups Anthony's Almond Flour
  • 1 cup Anthony's Tapioca Starch
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar

 

  1. Preheat the oven to 375° F. 
  2. Grease a 9" round pan. 
  3. In a mixing bowl, whisk together the eggs, oil, and milk. 
  4. Add the tapioca starch, almond flour, salt, garlic and onion powders, herbs, baking soda and apple cider vinegar. Mix well. 
  5. Transfer to round pan. 
  6. Bake for 25-30 minutes. 


Prep time: 10 minutes
Cook time: 30 minutes
Yield: 8 servings
