Ingredients for the salad: • Arugula • Pomegranate seeds • Orange slices • Feta cheese • Walnuts Ingredients for the dressing: • 1 ½ tbsp Anthony’s Goods Pomegranate Juice Powder • ⅓ cup water • ¼ cup freshly squeezed orange juice • ⅓ cup balsamic vinegar • ⅔ cup olive oil • 1 large garlic clove, minced • 2 tbsp Dijon mustard • 1 tbsp honey • 1 tsp salt
Instructions
This refreshing side salad is perfect for any season and the fruity balsamic-based dressing will complement any salad featuring fruit, nuts and cheese. Give it a spin in the food processor to make sure the oil and vinegar are well combined and store leftovers in the fridge. 1. Assemble the salad to your liking in a large bowl. 2. Dilute the pomegranate juice powder in the water and add to the bowl of a food processor. Add the rest of the dressing ingredients and blend until well combined. 3. Toss the salad and serve!
