These are sweet and coconutty with a soft, yet chewy with a little bit of crunchy texture.
But guess what? They're healthy! Full of nourishing fats from the coconut and almond and sweetened with dates and mulberries, these are nutritious but you'd never know it!
- Combine dates, almonds, almond butter, mulberries, and 1/4 cup shredded coconut in a food processor or blender until fully combined - forming a thick, crumbly dough.
- Wet hands and form dough into balls, about 2 tbsp in size
- Pour remaining 1/4 cup shredded coconut into a shallow bowl or plate and roll balls in it, coating the outsides entirely
- Allow to dry for about an hour at room temperature before serving
