Peanut Caramel Clusters

Satisfy your caramel cravings with caramel made with our organic sugar and organic coconut oil, complete with the crunch of dry-roasted peanuts. And of course these clusters of deliciousness are dipped in chocolate, just for good measure. Enjoy!

Peanut Caramel Clusters

  • 1 cup Anthony’s Goods Organic Cane Sugar
  • 2 tablespoons maple syrup
  • ¼ cup brown sugar
  • ¼ cup coconut cream
  • Pinch salt
  • 3 tablespoons Anthony’s Good Coconut Oil
  • 1 cup dry roasted salted peanuts
  • ½ cup chocolate chips
  • 1 tablespoon coconut oil
  1. In a small saucepan, combine the sugar, maple syrup, coconut cream, and salt and mix well. 
  2. Simmer over low heat, stirring occasionally, until caramel coats the back of a spoon.
  3. Transfer to a glass bowl and cool most of the way. 
  4. Fold in the peanuts. 
  5. Drop the peanut-caramel mixture in tablespoonfuls on a greased baking sheet. 
  6. Freeze until set. 
  7. Meanwhile, melt the chocolate chips with the coconut oil.
  8. Dip the peanut caramel clusters in the chocolate and return to baking sheet. 
  9. Freeze until set. 
  10. Store in airtight container the refrigerator.

Prep time: 30 minutes
Yield: 1 dozen
