Use up those leftovers and treat yourself to something unexpectedly indulgent by whipping up this pumpkin spiced chia pudding. Guaranteed to satisfy pumpkin spice enthusiasts everywhere.
Pumpkin Spiced Chia Pudding
- 1 cup unsweetened almond milk (or other plant milk)
- ¼ cup Anthony’s Goods Black Chia Seeds
- ½ cup pureed pumpkin
- 2 tbsp maple syrup
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- Place all the ingredients into a blender and blend for a minute and a half, until the contents thicken and become creamy.
- Tastes best after a few hours of chilling in the fridge (but you can eat it right away if you just can’t wait).
